Ballymaloe buttermilk scones

    cake flour

    bicarbonate of soda

    butter, cut into pieces

    chilled buttermilk or sour milk


Sift flour, sugar, bicarbonate of soda and salt into a bowl. Rub in butter until mixture resembles coarse meal. Stir in buttermilk, mixing with a spoon until all ingredients are moistened and a dough forms. Turn out onto a lightly floured surface and knead 4 to 5 times. Roll out or pat dough to 1,5 cm thick and cut out rounds with a 5 cm diameter cutter (or cut out diamonds approximately the same size). Gather up all scraps, roll or pat out and cut more scones. Arrange scones 5 cm apart on an ungreased baking sheet. Bake in the middle of a 200 ºC oven for 13 to 16 minutes, or until they are well risen and tops are golden brown. Let scones cool slightly on a rack and serve warm.
