0.00 garlic — clove, crushed
0.00 spring onions — chopped
5.00 ml vinegar — sherry
6.00 salmon — or kingklip steaks
6.00 fresh tarragon
65.00 ml wine — white
200.00 ml sour cream

Method:

1 Place the flesh of the avocado in a food
processor along with the garlic, spring onions,
vinegar and seasoning to taste, and blend until
smooth. Transfer to a mixing bowl and add
the crème fraîche. Cover and refrigerate for
30 minutes.
2 Lay a large sheet of tinfoil in a shallow
baking tin and place the fish on the foil. Top
each piece with a sprig of tarragon. Season to
taste and drizzle with the white wine. Fold the
foil over and seal closed.
3 Bake on the highest shelf in a preheated
oven for about 10 minutes, depending on the
thickness of the fish. Remove from the oven,
open the foil and discard the herbs. Serve the
fish with the avocado sauce, garnished with
slices of avocado and parsley.
