Baked ricotta

    fresh breadcrumbs

    ricotta cheese
  • 90
    Parmesan cheese, grated
  • 3
  • salt
  • freshly ground black pepper


Preheat oven to 180 ºC. Grease a 20 cm cake tin with butter and dust with breadcrumbs to prevent cheese from sticking. Beat ricotta until smooth, then beat in Parmesan cheese and eggs, one at a time, until creamy. Season to taste, and spoon mixture into cake tin, levelling the top with a spatula. Bake for 1 hour, or until firm to the touch. Remove from oven and cool on a cake rack until lukewarm. Turn upside down and carefully remove from tin. Slice and serve with grilled figs, tomato jam or onion marmalade. Serves 4.
