3.00 kg pumpkin
salt
250.00 ml breadcrumbs — brown
5.00 ml cinnamon — ground
30.00 ml brown sugar
3.00 cinnamon — stick
125.00 ml butter — cubed

Method:

Preheat the oven to 180 ºC (350 ºF). Spray a large ovenproof dish with non-stick spray. Slice the pumpkin into wedges, remove the seeds and peel if desired. Arrange in the ovenproof dish and season with salt. Mix the rest of the ingredients, except the butter, and sprinkle over the pumpkin. Dot with butter cubes, cover with aluminium foil and bake for 30 to 45 minutes or until the pumpkin is just tender (this will depend on the thickness of the wedges). Remove the foil for the last 15 minutes to brown the pumpkin slightly.
Serves 6-8.
