Baked potatoes with blue cheese and sweet onions

Ingredients (6)

6.00 potatoes — large, boiled with skins on
200.00 g blue cheese — crumbled
150 ml milk
100 g butter
sea salt and freshly ground black pepper
2 onion

Method:

Preheat the oven to 220 ºC. Spray a baking sheet with non-stick spray.

Slice off the tops of the potatoes.
Slice the onions and pan fry some butter slowly until caramelised, stir them often to make sure they don’t burn.
Scoop out some of the potato flesh, leaving a 1 cm edge all the way round.
Mash the scooped out flesh and mix with the blue cheese, onions, milk
and butter. Season with salt and black pepper to taste.

Fill the hollows with the blue cheese filling and crumble a little extra on top.
Bake for about 20 mins until hot all the way through.
Serve with a salad.
