Baked potato and chicken salad

Ingredients (12)

6 potatoes — medium, halved
olive oil — to drizzle
lettuce
fresh basil
4 chicken breast fillets — smoked, cut into strips
2 eggs — soft-boiled
100 feta cheese — cubed
DRESSING:
30 lemon juice
45 ml olive oil
1 egg yolk
15 ml garlic — cloves, crushed
salt and freshly ground black pepper — to taste

Method:

Preheat oven to 180°C. Place the potatoes on a baking tray. Drizzle with oil and roast for 25 minutes or until soft and
golden brown. Arrange the salad leaves on 4 plates, top with baked potatoes, smoked chicken strips, Feta cheese and basil. Garnish with boiled eggs cut into quarters, lengthways. To make dressing; beat together lemon juice, olive oil, egg yolk, garlic, salt and pepper. Drizzle over salad just before serving.
