Baked potato and chicken salad

    medium potatoes, halved
  • olive oil to drizzle
  • lettuce leaves
  • basil leaves
  • 4
    smoked chicken breasts, cut into strips
  • 2
    soft-boiled eggs
  • 100
    feta cheese, cubed
  • 30
    lemon juice

    egg yolk

    garlic, crushed
  • salt and pepper, to taste

Preheat oven to 180°C. Place the potatoes on a baking tray. Drizzle with oil and roast for 25 minutes or until soft and golden brown. Arrange the salad leaves on 4 plates, top with baked potatoes, smoked chicken strips, Feta cheese and basil. Garnish with boiled eggs cut into quarters, lengthways. To make dressing; beat together lemon juice, olive oil, egg yolk, garlic, salt and pepper. Drizzle over salad just before serving.
