Baked peppers

  • 6
    red or yellow peppers
  • 3
    cloves garlic, chopped
  • 60
    olive oil
  • salt and milled pepper


Preheat oven to 200 ºC and bake peppers for about 30 minutes, turning from time to time. Remove as soon as skin becomes blistered. Wrap peppers individually in absorbent paper, splash with cold water and leave to cool (this process makes it easier to remove skin). Peel and remove pips. Arrange in a serving dish, sprinkle with salt, pepper and garlic, then pour oil over. Serve with basil leaves. TOTAL KILOJOULE COUNT: 1 570 kJ (615 Cal). A portion: 430 kJ (100 Cal).
