Baked lemon pudding

Preheat the oven to 190 ºC (375 ºF). Spray a 26 cm pie dish with nonstick spray. Cream the butter, lemon rind and sugar until light and creamy. Add the egg yolks one at a time, beating well after each addition. Add the self-raising flour and mix well. Slowly add the milk and lemon juice while beating continuously. Whisk the egg whites until stiff peaks form and fold into the mixture. Turn into the prepared dish and place in a large oven dish filled halfway with boiling water. Bake for 25-30 minutes or until done and brown on top. Serve immediately. Serves 4-6.
