Baked hake with white wine

    frozen hake loin fillets
  • salt and freshly ground black pepper
  • fish spice

    onion, finely chopped

    fresh mushrooms, sliced

    dry white wine

    parsley, finely chopped

Preheat the oven to 180 ºC (350 ºF). Spray a 25 cm ovenproof dish with non-stick spray. Arrange the fish portions in the prepared dish. Season with salt, black pepper and fish spice. Dot with margarine. Fry the onion in a little oil in a pan until tender. Add the mushrooms and stir-fry until lightly browned. Add the white wine and parsley and bring to the boil. Pour the onion mixture over the fish. Bake for about 45 minutes or until the fish flakes easily with a fork. Serve with mashed potato. Serves 4-6.
