Baked fish with feta, avocado, tomatoes and basil

  • 4
    firm white-fish fillets of about 250g each (use kob, kingklip or yellowtail)
  • 4
    salt and freshly ground black pepper, to taste

    avocados, peeled, pip removed and sliced
  • 250
    cherry tomatoes
  • 2
    feta cheese, cubed
  • 250
    thick cream
  • 1
    fresh basil leaves, roughly torn


Oven temperature: 220°C
1. Preheat the oven. Grease an oven dish with butter and arrange the fish fillets inside. Season the fish with salt and freshly ground black pepper.
2. Sprinkle the avocado slices, cherry tomatoes and feta cheese over the fish and, lastly, add the cream. Place the oven dish in the top half of the oven and bake the fish for 15-20 minutes, or until golden brown. Garnish with fresh basil and serve immediately.
