Baked eggs

  • butter
  • 125
    thick cream
  • 4
    large eggs
  • salt
  • freshly ground black pepper
  • snipped chives to garnish
  • 4
    slices toast


Preheat oven to 180 ºC. Grease 4 teacups with butter and divide cream equally among cups. Add 1 egg to each cup and season. Cover cups with aluminium foil and place them in roasting pan filled with enough water to come just below the rim of the teacups. Bake for 20minutes. Garnish with snipped chives and serve immediately with hot toast. Serves 4.
