Baked Mediterranean eggs

    olive oil

    onion, sliced

    green pepper, sliced into strips

    chopped tomatoes

    tomato paste

    dried basil
  • 2
    ml
    dried origanum
  • 8
    black olives, pitted and halved
  • 2
    ml
    sugar
  • 4
    large eggs
 

Method

Preheat oven to 180 ºC. Heat oil in a saucepan. Add onion and pepper and sauté over medium heat until softened. Add tomatoes, tomato paste, herbs, olives and sugar. Bring to the boil, then reduce heat and simmer for 5 minutes. Divide mixture between 4 ramekins or small ovenproof dishes. Carefully break 1 egg into each dish. Cover with aluminium foil and bake in the oven for 10-15 minutes, until eggs have just set. Sprinkle with salt and freshly ground black pepper and serve with toast. Serves 4.
