Bacon schnitzel

  • 4
    pork slices
  • salt and black pepper to taste
  • 4
    slices cheese
  • 2
    rashers bacon, halved
  • cake flour
  • 2
    eggs, whisked
  • 80
    dry breadcrumbs
  • 30
    bacon flavoured biscuits, crushed
  • oil for frying


Flatten the pork slices slightly with the palm of your hand and season to taste with salt and black pepper. Place a slice of cheese and a piece of bacon on one half of each meat slice and fold over. Secure with a cocktail stick. Roll in cake flour, then in a mixture of the breadcrumbs and bacon biscuits. Chill for about half an hour before frying in shallow oil until golden brown and done. Drain on paper towelling and serve with salad and a baked potato. Serves 4.
