Ingredients (7)

4.00 potatoes — peeld and cubed
olive oil — and butter for frying
lettuce
75.00 g blue cheese — creamy, crumbled
10.00 bacon — rindless back rashers, fried, chopped
vinaigrette dressing
spring onions

Method:

Parboil potatoes until just cooked.
Heat oil and butter and sauté potatoes until golden (see tips).
Arrange lettuce on a platter or individual plates. Sprinkle with cheese, bacon and hot potatoes.
Drizzle with your favourite vinaigrette dressing and top with spring onions.
