Bacon bites

    rashers bacon
  • 1
    onion, finely chopped

    cake flour

  • salt and freshly ground black pepper to taste

    Italian herbs

    egg, beaten
  • dried breadcrumbs for rolling
  • oil for deep-frying

Fry the bacon until done but not crisp. Remove from the pan and chop finely. Sauté the onion in the butter until soft and add the cake flour. Stir until smooth, heat for about 1 minute while stirring continuously and remove from the stove. Slowly add the milk while stirring continuously. Return the mixture to the stove and heat until the sauce comes to the boil and thickens. Season well with salt and pepper and Italian herbs. Remove from the heat and cool. Roll into balls (the dough is very soft), dip the balls in the beaten egg and then roll in the crumbs. Fry in deep oil until golden brown. Drain on paper towelling. Makes 16 balls.
