Bacon and spinach tart

  • 400
    readymade puff pastry, defrosted
  • 250
    streaky bacon, chopped
  • 100
    baby spinach
  • 2
    cloves garlic, crushed
  • 100
    blue cheese, crumbled
  • 100
    creme fraiche
  • 1
    egg, lightly beaten
  • 50
    Parmesan cheese, grated


Place the pastry on a greased baking tray.
Heat a large frying pan and gently cook the bacon.
Add the spinach and garlic and sauté until the spinach wilts.
Mix the blue cheese, creme fraiche and egg together.
Season to taste.
Add to the bacon mixture and pour onto the pastry, leaving a 2 cm space around the edge.
Sprinkle on the Parmesan and bake in a preheated 180 °C oven for 20 to 25 minutes or until the filling is cooked and the pastry is puffed and golden around the edge.
