200.00 g butternut — peeled and cubed
250.00 g bacon — rindless, chopped
30.00 ml mustard — seeds

Method:

Follow recipe for basic white bread. While dough is rising, cook butternut until soft. Drain, mash and cool well. Lightly fry bacon and allow to cool. Once bread has finished rising, add butternut and bacon. Knead in well. (The dough will become very soft and sticky.) Place dough in a greased and lined 20 cm square baking tin and allow to rise until double in size. Sprinkle with 30 ml mustard seeds and bake at 200 ºC for 50-60 minutes until a skewer comes out clean when inserted in the middle. Serve sliced, with butter.
