Bacon and Gruyere cheese salad

Ingredients (9)

125.00 g bacon — streak, rindless
100.00 g gruyère cheese
2.00 salad greens
1.00 red onion — thinly sliced
DRESSING
1.00 garlic — cloves, crushed
5.00 ml Dijon mustard
30.00 ml vinegar — white wine
5.00 ml lemon juice
125.00 ml olive oil — extra virgin

Method:

Fry the bacon until crisp.
Remove from pan and allow to cool slightly.
Use a vegetable peeler and thinly slice the cheese.
Toss the salad leaves and onion slices in a salad bowl.
Add the cheese and bacon.
DRESSING
Whisk the garlic, mustard, vinegar and lemon juice.
Add the oil in a steady stream, whisking until smooth.
Pour over the salad just before serving.
