Baby spinach salad

    baby spinach
  • 2
    hard-boiled eggs, finely chopped
  • 1
    red or white onion, quartered and thinly sliced
  • DRESSING
  • 30
    ml
    olive oil
  • 2
    ml
    mustard powder
  • 2
    cloves garlic, finely chopped
  • sea salt and milled black pepper
  • 15
    ml
    red wine vinegar
 

Method

 
Arrange spinach on a flat platter, sprinkle with chopped hard-boiled eggs and onion. DRESSING: Cream oil, mustard, garlic, salt and pepper. Stir in vinegar and sprinkle over salad. Toss gently but thoroughly before serving.
