Baby potato salad

    baby potatoes, washed

    natural yoghurt
  • 30
    lemon juice
  • 10
    freshly chopped thyme
  • 8
    marinated sun-dried tomatoes, sliced
  • 10
    olives, pitted and quartered
  • 500
    leftover cooked turkey, shredded


10-15 minutes
1. Boil potatoes until tender. Set aside to cool, then cut them into halves. 2. Combine mayonnaise, yoghurt, lemon juice and thyme and season with salt and freshly ground pepper to taste. 3. Combine potatoes, sun-dried tomatoes, olives and turkey pieces in a large bowl. 4. Pour dressing over the mixture and toss lightly. Refrigerate until ready to serve.
