Ingredients (8)

30.00 baby potatoes — washed
125.00 ml mayonnaise
125.00 ml yoghurt — natural
30.00 ml lemon juice
10.00 ml fresh thyme — chopped
8.00 sun-dried tomatoes — marinated, sliced
10.00 olives — pitted, quartered
500.00 ml cooked turkey — leftover, shredded

Method:

1. Boil potatoes until tender. Set aside to cool, then cut them into halves.
2. Combine mayonnaise, yoghurt, lemon juice and thyme and season with salt and freshly ground pepper to taste.
3. Combine potatoes, sun-dried tomatoes, olives and turkey pieces in a large bowl.
4. Pour dressing over the mixture and toss lightly. Refrigerate until ready to serve.
