Dressing: good-quality mayonnaise
1.00 punnet rosa tomatoes
15.00 ml pesto — red
4.00 chicken breast fillets — smoked
1.00 packet baby spinach
2.00 avocado — peeled and sliced

Method:

1. Toss the salad
ingredients in a bowl.

2. Dressing Mix the
mayonnaise and the pesto.
Add a splash of milk if
the dressing is too thick.
Drizzle over the salad just
before serving.
