Avocado and shaved beef pizza

  • 4
    plain pizza bases
  • olive oil
  • 200
    freshly grated Parmesan cheese
  • milled pepper
  • 3
    firm, ripe avocados
  • 300
    shaved, smoked beef slices
  • 16
    cherry tomatoes, halved (optional)


Place pizza bases on oiled baking sheets. Drizzle olive oil over and sprinkle Parmesan cheese and pepper on top. Chop avocados into medium-sized pieces and divide equally between pizzas. Top with beef slices and dot with tomato halves. Bake at 220 ºC, on second shelf from bottom of oven, for about 20 minutes, or until pizza base is crisp and topping is cooked through. You may wish to sprinkle a little extra Parmesan cheese on top and grill until golden. Serve with a mixed salad.
