SALAD
1.00 avocado
2.00 oranges — large
1.00 onion — or chives, chopped
DRESSING
125.00 ml yoghurt — plain
15.00 ml orange juice
grated orange rind — little
15.00 ml honey

Method:

Halve the avocado lengthways, stone and skin. Sice each half into slices and spread out into fans. Arrange on a pretty serving platter and sprinkle with lemon juice. Skin the oranges all the way to the flesh so the pith is also removed.
Slice the oranges and arrange on the platter along with the onion slices. Blend all the ingredients for the dressing and pour over the salad.
Serve 4-6.
