Aubergine stew

    aubergines (brinjals), peeled
  • 1
    onion, sliced
  • 10
    curry powder
  • 250
    coconut milk
  • salt


Slice aubergines lengthways. Heat oil and fry onions with curry powder, add coconut milk and bring to the boil. Add aubergines, season and simmer until cooked.
