Assolas sables hollandaise

  • 100
    castor sugar
  • 200
    unsalted butter
  • 300
    cake flour, sieved


Mix all ingredients in a food processor to form a dough. Shape into a log, wrap in foil or cling film and chill in the refrigerator for 1 hour, or until needed. To bake these shortbread biscuits, cut slices off the log as required, arrange on a baking sheet and bake at 180 ºC until pale brown, about 15 minutes. Serve with ice cream or other desserts such as fruit compote, or with coffee.
