Ingredients (8)

15.00 ml margarine
15.00 ml flour
125.00 ml milk — low-fat
2.00 ml mustard — powder
salt and freshly ground black pepper — to taste
50.00 ml cheddar cheese — or gouda cheese
175.00 g asparagus — tinned
30.00 ml fresh chives — chopped

Method:

1. Make sauce by placing margarine, flour, milk, mustard powder and seasoning into a saucepan. Place on medium heat.
2. Whisk ingredients together continuously until mixture boils and thickens.
3. Remove from heat and stir in cheese spread until smooth. Stir in drained asparagus cuts, add chopped chives.
4. Spoon filling over baked potato. Sprinkle with a little cayenne pepper. Serve hot.
Makes about 250 ml sauce – enough for about 8 potatoes.
