Asparagus and feta slices

  • 400
    frozen puff pastry, thawed
  • 1
    egg, beaten
  • 250
    feta cheese, finely chopped
  • 250
  • salt and pepper
  • 700
    tender asparagus spears, blanched and cooled
  • lemon peel strips


Roll out pastry and cut out 5 cm squares. Brush lightly with beaten egg. Bake at 220 ºC for 8 to 15 minutes, or until golden. Cool. If pastry rises well, the squares may be halved and both halves used as bases. Mix together feta, cream and seasoning and spread onto pastry squares. Arrange asparagus spears on top and garnish with lemon peel. Makes 30-60.
