Asian-style pesto

A spicy version of the classic pesto.

Ingredients (10)

1 fresh basil
1 fresh ginger — peeled, chopped
2 garlic — cloves
1 fresh chillies
lemon — juice only
1 tsp brown sugar
100 g cashew nuts — roasted
1 parmesan cheese — grated
50-75 ml olive oil — extra virgin
salt and freshly ground black pepper — to taste

Method:

Whizz all the ingredients in a blender and season to taste. You can
add more chillis for fire, ginger for freshness or lemon for tartness
and of course more garlic if you want to ward away all those pesky (but
sexy) vampires.
 
It’s fun to play around and tweak it to your palate or the dish you want to serve it with.
