Apricot-glazed pears with ginger

6.00 pears
30.00 ml butter
30.00 ml sugar
300.00 ml orange juice
125.00 ml brandy
10.00 ml fresh ginger — grated
2.00 cinnamon — stick
90.00 ml jam — apricot, melted

Method:

Peel pears, leaving them whole, stalks intact.
Butter an oven-to-table dish and place pears upright in it. Sprinkle with sugar and orange juice. Pour boiling brandy over and around pears. Sprinkle ginger over and add cinnamon sticks.
Cover with foil and bake at 160 ºC for 1 to 1 1/2 hours. When just soft, remove foil and brush pears with jam, mixed with 30 ml (2 tbsp) cooking liquid. Grill until lightly browned. (Watch closely, to ensure that they don’t burn.)
Serve with thick cream lightly blended with a little natural yoghurt, accompanied by almond brittle.
