Ingredients (6)

1.00 cake — gingerbread
7.00 Granny Smith apples — peeled, halved, cored, sliced
1.00 lemon juice
butter
castor sugar
custard — to serve

Method:

Cut gingerbread into 1 cm slices lengthwise and halve. Place two halves together and cut a circle with your largest cutter or around a small saucer.
When preparing the apples, place them in a bowl of water with lemon juice so that they will keep their colour. Drain and dry. Gently fry apple pieces in butter for 2 to 3 minutes. Cool.
Arrange apple slices overlapping in a circle on the gingerbread. Sprinkle with castor sugar and grill to caramelise apple.
Carefully lift gingerbread apple rings onto each plate and serve immediately with custard.
