Apple tartlets

  • 400
    good quality pre-rolled puff pastry
  • grated zest of 1 orange

    Granny Smith apples, peeled, cored and quartered
  • 25
    butter, cubed
  • 60
    castor sugar
  • 30

    apricot jam


Grease and line a baking tray.
Cut the pstry into six 10 cm discs.
Place the discs on a baking tray.
Sprinkle the zest evenly over the discs.
Slice the apples into thinner slices and start by arranging them around the edges of the pastry, overlapping the slices.
Do the same in the middle, making sure you cover the pastry with apple slices.
Dot with butter on the apples, sprinkle each tart with castor sugar and bake at 220 °C for 15 to 20 minutes until the pastry is crisp.
Heat the honey and jam together and brush over the apples.
Serve with whipped cream or ice cream.
