Ingredients (9)

3.00 apples — green
2.00 ml cinnamon — ground
50.00 ml water — cold
100.00 ml white sugar
125.00 ml butter — or margerine
4.00 eggs — large, beaten
220.00 ml flour
6.00 ml Baking powder
salt — just a pinch

Method:

Preheat the oven to 180 C and spray an oven dish with non-stick cooking spray or smear lightly with butter. Peel and core the apples and cut into thickish slices. Arrange the apple in the dish and sprinkle with cinnamon. Pour over the water as well as 15 ml of the sugar. Cream the rest of the sugar with the butter until light and creamy. Beat the eggs gradually into the butter mixture (beat very well, otherwise it will separate). Sift the dry ingredients over the mixture and stir in. Pour the mixture over the apples and bake for about 40 minutes until cooked. Sprinkle the warm pudding with castor sugar and serve with vanilla ice cream.
Makes 1 medium-sized pudding.
