Ingredients (11)

2.00 Granny Smith apples — sliced
30.00 ml honey
2.00 sausages — pork
15.00 ml wholegrain mustard
60.00 ml olive oil — extra virgin
0.50 lemon — juice only
45.00 ml vinegar — red wine
50.00 g watercress
50.00 g baby spinach
100.00 g blue cheese — sliced
0.00 sea salt and freshly ground black pepper

Method:

Place the apples in a baking dish, drizzle with honey and cook under a hot grill until apples are soft and sticky.
In the meantime, cook the sausages in a non-stick frying pan.
When cooked, take them out and keep warm.
Add the mustard, olive oil, lemon juice and vinegar to the pan. Heat through.
Place the spinach leaves in four dishes, top with sliced sausages, apples and cheese.
Pour over the dressing and any juices leftover from the apples. Season to taste.
