Apple fritters with roasted plums

Ingredients (8)

1.00 cider — apple
240.00 g flour — self-raising
40.00 ml icing sugar
500.00 g plums
350.00 ml sugar
15.00 ml lemon juice
0.00 sunflower oil — for frying
6.00 apples — green, peeled and cored

Method:

1. Fritters Pour the cider into a bowl. Add the self raising flour and icing sugar and whisk until smooth. Set aside in the fridge for an hour.
2. Plums Score the plums’ skins and place them in a large bowl. Cover with boiling water, leave for a minute, then drain and cover with cold water. Peel, halve and remove the pips.
3. Place the plums in a greased roasting tin and sprinkle with the sugar. Roast in a preheated oven for 15 to 20 minutes until soft and sticky. Remove from the oven, stir in the lemon juice, and set aside.
4. While the plums are roasting, prepare the apple fritters. Remove the batter from the fridge and heat a saucepan of oil for deep-frying over a medium heat. (To test if the oil’s hot enough, drop a little batter into the oil. It should immediately start to sizzle.) Cut the apples into 1cm slices, dip each slice into the batter, and fry a few at a time until golden. Drain on absorbent paper.
5. Spoon the plums onto individual serving plates and top each portion with four-fritters and another spoon of plums. Serve with a dollop of cream or ice cream.
