Ingredients (13)

6.00 apples — Golden Delicious, peeled and cored
120.00 ml sugar
100.00 ml brandy — or Calvados
BATTER
625.00 ml flour — cake
30.00 ml cornflour
0.00 salt — just a pinch
2.00 eggs — whisked
250.00 ml beer
15.00 ml oil
4.00 eggs — white
50.00 ml sugar
TO FINISH
0.00 oil — for deep frying
40.00 ml icing sugar

Method:

Slice the apples into 1 cm rings.
Mix the sugar with the calvados or brandy and soak the apple rings in the mixture.
BATTER
Sift together the flour, cornflour and salt in a large mixing bowl. Make a well in the centre and pour in the eggs.
Mix the flour and eggs, then gradually add the beer to the batter, beating until smooth. Mix in the oil and set aside.
Whisk the egg whites until soft peaks begin to form and add the sugar, beating until smooth and shiny.
Fold the egg whites into the batter using a large metal spoon.
TO FINISH
In a deep-fat fryer or large saucepan, heat the oil to 170 &degC. Drain the apple rings well and pat dry.
Dip the rings into the batter one at a time and deep-fry five rings at a time in the oil until brown all over.
Drain on paper towels, dust with the icing sugar and serve hot.
