Apple flap jacks

Ingredients (10)

2 eggs — well beaten
1 1/2 cup milk
2 cup flour
1 tsp Baking powder
1/2 tsp salt
1/4 cup sugar
3 apple — peeled, grated
1 tsp vanilla — essence
oil — for frying
castor sugar

Method:

Mix eggs and milk in
a large bowl.
In a smaller bowl mix the flour, baking powder, salt
and sugar.
Combine the wet and dry ingredients and stir in the apples.

Fry spoonfuls in a thin layer of oil on a medium heat until golden brown
and cooked through. Drain on kitchen paper towels and sprinkle with
castor sugar just before serving.
