Ingredients (7)

60.00 ml raisins
60.00 ml rum — dark
1.00 pie apples — tinned, drained and chopped
2.00 ml cinnamon — ground
30.00 ml brown sugar
800.00 g puff pastry — or shortcrust
0.00 icing sugar — to serve

Method:

FILLING
Put the raisins in a bowl and cover with the rum. Allow to soak for 40 to 60 minutes.
Drain the raisins and mix with the apples, cinnamon and brown sugar.
Unroll the pastry and cut out 10 cm diameter circles using a cookie cutter or glass.
Spoon the filling onto one half of each of the circles.
Brush the edges with water; fold pastry over and neatly press with a fork to seal the edges.
Place the pastries on a greased baking tray and bake for 12 to 15 minutes, until crisp and golden.
Remove from the oven and sprinkle with sifted icing sugar.
Serve warm, or at room temperature, with fresh fruit for dessert.
