Ingredients (9)

3.00 onions — medium, finely chopped
125.00 ml water
1.00 kg apples — green, peeled, cored and cubed
500.00 g dates — chopped
100.00 g walnuts — chopped
5.00 ml salt
5.00 ml ginger — ground
500.00 ml vinegar — white wine
200.00 g sugar

Method:

Place onions and water in a large microwave dish.
Microwave on HIGH for 3 minutes.
Add apples and microwave on HIGH for 8 minutes.
Add dates, walnuts, salt, ginger and half the vinegar and microwave on HIGH for 6 minutes, stirring every 2 minutes.
Add the sugar and remaining vinegar and cook for a further 8 minutes on HIGH, stirring every 2 minutes.
Pour into sterilised jars and allow to cool, then seal.
Makes 1 litre.
