FILLING
3.00 apples
15.00 ml castor sugar
SHORTCAKE
175.00 g flour — cake
75.00 g castor sugar
175.00 g butter — softened
75.00 g semolina
TOPPING
75.00 g flour — cake
125.00 g butter
75.00 g castor sugar
75.00 g almonds — ground
50.00 g almonds — flaked
5.00 ml cinnamon — ground
icing sugar — to serve
1.00 deep baking tray, greased and lined

Method:

1. Peel, core and slice the apples and place them in a large saucepan with the sugar and 15 ml water.
2. Cook gently for about 5 minutes, or until the apple is starting to soften. Leave over the heat for a few minutes to dry out, then leave mixture to cool.
3. Preheat the oven to 180 ºC. Place all the dry shortcake ingredients in a bowl, add the butter and lightly rub in using your fingertips, until the mixture resembles fine breadcrumbs. Knead well to form a smooth ball of dough.
4. Press the mixture into the bottom of the prepared tray and spread the cooled apple mixture evenly over the top.
5. To make the crumble, sift the flour into a bowl and rub in the butter until the mixture resembles fine breadcrumbs. Stir in the castor sugar, both the ground and flaked almonds and the ground cinnamon.
6. Sprinkle the mixture over the apple, place in the oven and bake for 45 to 55 minutes.
7. Remove and leave to cool in the tray, turn out and lightly dust with icing sugar and cut into small squares.
