Ingredients (9)

115.00 g butter — soft
115.00 g castor sugar
2.00 eggs — large
115.00 g flour — cake
5.00 ml Baking powder
3.00 apples — green, peeled and sliced
SAUCE
100.00 ml cream
200.00 ml apple — cider
15.00 ml lemon juice

Method:

Cream butter and sugar together until light. Beat in eggs, one at a time.
Fold in flour and baking powder.
Spoon mixture into a greased and lined 25 cm springform pan.
Layer the apple slices evenly over the cake batter mixture. Bake in preheated 160 °C oven for 50 to 60 minutes until cooked through and golden.
SAUCE: Bring cream, cider and lemon juice to the boil. Simmer gently for 15 minutes. Pour over the cake.
Serve warm or at room temperature.
