Ingredients (9)

450.00 g apples — green
285.00 g rhubarb
25.00 g fresh ginger — peeled and chopped
50.00 g brown sugar — soft
30.00 ml water — cold
STREUSEL TOPPING
50.00 g flour — wholewheat
50.00 g oats
50.00 g brown sugar — soft
50.00 g butter — cold

Method:

Peel, core and slice apples, then layer them in a 1 litre ovenproof dish. Peel and cut the rhubarb into even lengths. Place on top of the apple slices. Top with the chopped ginger and sugar, and add the water. STREUSEL TOPPING: Rub all ingredients together until mixture resembles coarse breadcrumbs. Sprinkle over the fruit and bake in preheated oven for 40-45 minutes until golden. Serve with custard or cream.
