Apple and berry coconut crumble puddings

Ingredients (12)

CRUMBLE:
80 g desiccated coconut
1/4 cup coconut — fresh, shavings
80 g almonds — flaked
1/4 cup oats
3 tsp demerara sugar
2 Tbs flour
60 g butter — melted
2 Tbs honey
FILLING:
1 apples — tinned pie apples, drained
200 g mixed berries
icing sugar — for dusting
coconut — fresh shavings, to garnish

Method:

Preheat the oven to 160°C.

For the crumble
In a large bowl, stir together all the ingredients until well combined.

For the filling
Arrange the apples and berries in an heatproof dish. Top the filling mixture with the crumble and bake for 25–30 min or until golden.

To serve
Serve warm, dusted with icing sugar and garnished with fresh coconut flakes.
