Anytime fry-up

  • 2
  • 2
    Spanish sausages
  • 1
    onion marmalade
  • salt
  • pepper
  • chili flakes
  • cheddar cheese (use which ever variety you prefer.)
  • 2
    slices of toast

Chop up the sausages and fry in a medium heat pan until golden.
Don’t add any oil or butter as the sausages are oily enough.
Once nicely browned add the onion marmalade.
Make sure the onion marmalade coats all the sausage and let it cook slowly.
Make 2 openings in the sausage and marmalade and crack an egg into each.
Season with salt, pepper and chilli flakes and top with the cheese.
Cover the pan to help the eggs cook (usually once the tops of the eggs have turned opaque).
Slide everything out of the pan onto two hot, buttered pieces of toast.
