Angel cake

  • 120
    cake flour
  • 250
    castor sugar
  • 8
    large egg whites
  • pinch salt
  • 5
    cream of tartar


40‑45 minutes
Sift flour and 50 ml of the sugar together. Beat the egg whites in a large bowl until foamy. Add salt and cream of tartar and beat until stiff and shiny, but not dry. Fold in the remaining sugar, a spoonful at a time. Sift in the flour and sugar mixture in layers, folding in each layer gently. Pour mixture into an ungreased 24 cm diameter tube pan and bake in preheated 180 °C oven for 40-45 minutes or until golden. Allow to cool completely before removing from the pan. Drizzle with a glacé; icing or melted chocolate. Makes 1 x 24 cm ring cake.
