American-style gammon

    low-fat smooth cream cheese

Preheat oven to 200 ºC.
Place the potato wedges in a roasting pan that has been coated with cooking spray and bake in the oven.
Mix the honey, ginger, orange rind and juice.
Put the gammon on a large piece of foil, on an oven tray.
Pour over the honey glaze, wrap foil loosely around the gammon and bake alongside the potatoes for 20 minutes.
Meanwhile, mix together the cream cheese and chives, then season with salt and freshly ground black pepper.
Uncover the gammon and cook for a further 40 minutes, basting often.
Remove and set aside to rest for 10 minutes.
Bring a saucepan of water with a pinch of sugar to the boil and cook the sweetcorn for 10 minutes.
Slice the gammon and serve with the sweetcorn and salad leaves, and the potato wedges topped with a blob of cream cheese dip.
