Alpine eggs

  • 6
    large eggs
  • 250
    Cheddar cheese, grated
  • 25
  • salt and milled black pepper
  • chopped chives


Generously butter a shallow 20 cm baking dish. Cover base with half the cheese. Carefully break eggs onto cheese, season well and cover completely with remaining cheese. Dot with butter and bake at 180 ºC until set, about 25 minutes. Cheese will be melted and bubbling and eggs just set. Just before serving, sprinkle with chopped chives and serve with crusty bread and a salad.
