140.00 g flour — cake
50.00 g almonds — ground
50.00 g sugar
2.00 ml cinnamon — ground
0.00 salt — just a pinch
100.00 g butter — soft
1.00 eggs — extra-large
100.00 g chocolate — melted
0.00 coloured sprinkles — 100s and 1000s

Method:

Preheat the oven to 180 ºC (350 ºF).
Spray two large baking trays with non-stick spray.
Combine the dry ingredients and rub in the butter with your fingertips until the mixture resembles breadcrumbs.
Add the egg and mix to form a stiff dough.
Shape the dough into a ball, wrap in plastic wrap and chill for 1 hour.
On a floured surface, roll dough out until 5 mm thick.
Cut out star shapes with a cookie cutter and arrange the shapes on the baking trays.
Roll the remaining dough into small balls and place in the centre of each star.
Brush with the beaten egg and bake for 8-10 minutes or until just beginning to brown.
Cool slightly before removing from the baking trays. Cool completely.
Dip only the small balls in the melted chocolate.
Sprinkle with hundreds and thousands and leave to dry. Store in airtight containers.
