Almond biscuits

    softened butter
  • 180
    soft brown sugar

    extra-large eggs, beaten
  • 280
    self-raising flour
  • 150
    glacé cherries, halved
  • 75
    almond flakes
  • 25
  • almond essence (optional)


Preheat the oven to 190 ºC (375 ºF). Grease a couple of baking sheets. Cream the butter and sugar together. Add the eggs gradually and beat well. Sift the self-raising flour and fold into the sugar mixture, alternating with half the glacé cherries and almond flakes. Add the milk and mix to form a slightly softer dough. Drop spoonfuls of the dough on the baking sheet, allowing room for them to spread. Flatten slightly with the back of a spoon. Sprinkle with the remaining almond flakes and place half a cherry on each one. Bake for 8 to 12 minutes or until golden brown. Allow to cool slightly on the baking sheets before transferring to a wire rack to cool completely. Store in an airtight container.
