Almond and sesame brittle

    butter
  • 300
    g
    sugar
  • 125
    ml
    syrup
  • 250
    ml
    water
  • 100
    g
    almonds, blanched and roughly chopped
  • 2
    ml
    bicarbonate of soda
  • 15
    ml
    sesame seeds
 

Method

10 to 15 minutes
 
Melt butter in a saucepan. Add sugar, syrup and water and stir over medium heat until sugar dissolves. Leave to boil without stirring until mixture reaches hard-ball stage: mixture should be hard and brittle when a little is dropped into a glass of cold water. Add the bicarbonate of soda, nuts and sesame seeds. Mix well, Pour into a shallow greased pan. Allow to cool slightly before marking off squares. When cool, break into marked squares.
