Agua de jamaica (hibiscus flower water)

  • 100 g (3 cups) dried jamaica flowers
  • 4 litres water
  • 230 g sugar


Simmer jamaica flowers in about half the water for 10 minutes.
Remove from heat and allow the infusion to cool.
Pour liquid through a strainer into a large jug, reserving the flowers.
In order to extract maximum flavour from the flowers, add remaining water to the flowers and strain into the jug for a second time.
Add sugar, stirring until it dissolves completely.
As an optional addition, squeeze the juice of half a small lime into the water.
Serve well chilled or with ice.
